VINEYARD LOCATION:
In the Modenese plain at Sozzigalli di Soliera (MO), in the gravelly banks of the Secchia river.
GEOLOGICAL ZONE:
alluvial soils within the floodplain of the Secchia River.
VINE:
100% Lambrusco di Sorbara.
PLANTING DENSITY:
2,500 vines/ha at GDC.
VINIFICATION:
the grapes immediately enter the soft press without going through the destemming machine, only the flower must is used, to have a finer color and fragrance. Then the cleaning of the must takes place, which is fermented at low temperatures and the base wine is obtained.
REFERMENTATION:
Refermentation in the bottle on its own yeasts, at low temperatures for over 12 months. Then we make the remuage and degorgement.
STORAGE:
2+ years.
PRODUCTION:
3,500 bottles.

COLOR:
soft rosé , with very fine and persistent perlage.
PERFUME:
light of bread crust and white fruit.
TASTE:
dry, firm and fresh.
ACCOMPANIMENT:
cured meats, boiled meats ,white meats and typical Modenese dishes and fish.
SERVING TEMPERATURE:
6-8°.
