The productive spaces of Villa di Corlo.
The winery, built respecting the rural characteristics of the area, has been equipped with the most technologically advanced systems for the processing of sparkling wines, using cold maceration, in order to have a wine that extracts all the flavors and fragrances of the grapes from which it comes, and that is healthy and very pleasant to drink.
The same plants comply with the regulations concerning hygiene, safety and environmental impact.
Villa Palazzo
Where our vinegar rests and ages.
In the spirit of tradition, the farm produces the Traditional Balsamic Vinegar of Modena PDO, in the vinegar cellar located in the attics of the “Villa”, obtained from cooked grape must and aged for many years in the classic jars of different wood.
The casks are located in the attic of the family villa, which can be visited by appointment.
Two types are produced: Extravecchio, with more than 25 years of aging, and Affinato, with more than 12 years of aging. They are bottled by the Consortium of Traditional Balsamic Vinegar of Modena, in the classic bottle designed by Giorgetto Giugiaro.
Vineyards
The heart of the winery, the soul of Villa di Corlo.
The primary mission of the winery has been since the beginning of its activity in the exclusive use of grapes cultivated by the winery as well as the most modern technology in order to obtain the best possible product.
Vineyards of Chardonnay, Merlot and Cabernet Sauvignon of different clones, are cultivated at an altitude of 320 meters (650 feet), have a south-southeast exposure and are trained with guyot system. The microclimate, besides allowing the grapes to ripen well, characterizes the wine.
Vinegar
Care, attention and patience.
VILLA DI CORLO traditional balsamic vinegar of Modena is the result of the very slow transformation of cooked grape must coming from our vineyards. Its high concentration of sugar initially develops an alcoholic fermentation, which is then followed by the acetic one, transforming the alcohol into vinegar. This can happen only in “batteries” of small barrels made of different woods (Oak, Chestnut, Juniper, Ash, Mulberry) in order to give the vinegar particular scents and aromas.
These batteries are composed of at least 5 barrels, of decreasing capacity from 50 liters to 5 liters. The barrels have, at their top, a square opening, which allows the process of oxidation of the vinegar, protected from impurities with a cloth.
