VINEYARD:
Pinot Noir/Chardonnay grown in the high hills, from vines about 10/15 years old.

VINIFICATION:
Through soft pressing we immediately separate the skins from the must. The base wines, after the first alcoholic fermentation, mature until the end of the following spring in thermo-conditioned steel tanks. Then they are wisely blended in order to achieve the creation of the curvèe. This particular technique gives the Spumante the typical character of quality wines. FRAELI is then refermented in bottle according to the procedure of the Italian Classic Method, at least 18 months on its lees.
AGING:
18 to 24 months.

intense but delicate with fine and persistent perlage.
TASTE:
dry and elegant.
ACCOMPANIMENT:
excellent both as an appetizers and for the whole meal, such as fish dishes and risottos as long as the dishes are delicate and refined.

6-8°.
