Very soft pressing.

REFERMANTATION:

Refermentation in the bottle on its own yeasts, at low temperatures for over 12 months.

STORAGE:

2 years, depending on vintages.

PRODUCTION:

3000 bottles.

COLOR:

bright light pink, with very fine and persistent perlage.

PERFUME:

scents of berries and cherry.

TASTE:

dry, persistent and enveloping.

ACCOMPANIMENT:

cured meats, first courses with meat ragout, white meats and blue fish.

SERVING TEMPERATURE:

6-8°.

ALCOHOLIC DEGREE:

12%
