INGREDIENTS:
100% Acetified Cooked Grape Must, no dyes, no caramel, no thickeners.
DESCRIPTION:
During the harvest, the grapes from our vineyards in the foothills of Modena are pressed in order to obtain a grape must, which has an average of 19/21 degrees BABO. The grape must is then cooked in stainless steel tanks, at a temperature of 90 degrees centigrade, for about 36 hours, in order to obtain the concentration and a sugar level of 38/40 degrees BABO as minimum. Then the cooked grape must is put into small oak, cherry and chestnut barrels to age for several years. Every year, at the end of winter, the product is decanted into smaller barrels in order to obtain the current density with the passing of time.
Only after a long aging CARATELLO is ready to be drawn and bottled.
